POSITION: Sous Chef
REPORTS TO: Head Chef
JOB SUMMARY: Oversee general kitchen operations as directed by the Head Chef. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
ESSENTIAL JOB FUNCTIONS:

Supervise all cooks & stations in the kitchen to ensure products & dishes are to the standards set by the Head Chef

Expedite orders for assigned meal periods

Supervise stewards to ensure kitchen and equipment are kept clean & organized at all times

Ordering of all foodstuffs necessary to produce menu items

Perform month end inventory of all foodstuffs

Attend all departmental meetings as directed by Head Chef

Work directly with the Head Chef in menu development & creation of new dishes
-
Supervise & maintain hourly employee timesheets on a daily basis
-
Oversee & monitor food production for satellite outlets, including the Mercantile & the Tea Bar

Assist in scheduling of staff
-
Assist in disciplinary actions as needed

Assist in interviewing , hiring, & training new staff as needed
ESSENTIAL WORK SKILLS:
-
Excellent knife skills
-
Excellent knowledge of wide variety of cooking terms and techniques
-
Ability to lift and carry up to 30 pounds
-
Able to work standing for extended periods of time
-
Basic computer knowledge (email, excel, etc)
MINIMUM EDUCATION AND WORK EXPERIENCE:
-
Must have a High School diploma or equivalent
-
Ability to speak Spanish is preferable
-
Must have at least 5 years experience working in a commercial kitchen
