FOOD & BEVERAGE DIRECTOR

SCOPE AND MAIN PURPOSE OF POSITION:
Oversee daily operations of food and beverage services to ensure operational efficiency, high standards of service, and maximize profitability. Responsible for personnel matters including but not limited to interviewing, scheduling, coaching, evaluating, and discharging. Ensure that all company and regulatory policies and standards are consistently met. Maintain proper supplies of products and conduct inventory as prescribed.

FOOD & BEVERAGE DIRECTOR

Responsible for personnel matters including but not limited to interviewing, scheduling, coaching, evaluating, and discharging. QUALIFICATIONS:
- Must be at least 21 years of age
- Must be able to pass a pre-employment drug test and qualify for a gaming license
- Must be able to obtain/maintain any necessary licenses and/or certifications
- Cannot be convicted of a felony
- Minimum of 5-8 years of recent experience in Casino Food and Beverage management required; recent experience must be no more than 2-3 years ago maximum
- Prior experience in Tribal gaming preferred
- Bachelor’s degree in restaurant, hotel, or management a plus
- Must have at least 2 years of experience bartending in an accredited bar
- Must be a team player in order to collaborate and coordinate with others
- Excellent communication and interpersonal skills are required
- Knowledge of food and beverage industry trends and best practices is essential
- Thorough knowledge of service standards, beverage products, preparations, and presentations is required
- Thorough knowledge of cost control, labor controls, menu writing, merchandising is required
- Strong leadership and team management skills are required
- The ability to work in a fast-paced environment is essential
- Strong organizational and problem-solving skills are essential
- The ability to manage budgets and financial plans is required
- Excellent public relations skills are required
- Excellent customer service skills are required
- Great attention to detail is essential
- Sound knowledge of Microsoft Office is essential
- Previous experience with procurement systems is required
- Previous experience with POS systems required; InfoGenesis/Agilysys strongly preferred
- Must be flexible and be able to work holidays, weekends, days, and nights
DUTIES AND RESPONSIBILITIES:
- Manage and oversee the daily operations of the Food & Beverage Department
- Manage and mentor the Food & Beverage team to ensure efficiency and high standards of service
- Develop and implement strategies to increase revenue and profitability
- Develop and maintain relationships with vendors and suppliers
- Monitor inventory levels and order supplies as needed
- Ensure that all food and beverage offerings comply with health and safety regulations
- Develop and implement marketing strategies to promote food and beverage offerings
- Manage budgets and financial plans for the Food & Beverage Department
- Delegate tasks to Supervisors or Leads
- Coordinate the formulation of the annual operating budget in determining projected revenues and expenses, personnel, operating equipment and requirements in line with the annual business plans, supported by key marketing plans as well as revenue driven initiatives
- Provide accurate and realistic forecasts and updates on anticipated changes in the business whenever appropriate
- Monitor all costs and recommend measures to control them
- Ensure that the department operational budget is strictly adhered to
- Ensure that all food and beverage services are managed efficiently according to the established operating procedures
- Closely monitor productivity levels and take immediate corrective action if necessary
- Monitor and control vacation planning for the department
- Monitor, control, and minimize overtime for the department
- Ensure that the standard operating procedures are adhered to in order to achieve a high level of service
- Maintain and amend where appropriate all operating procedures in line with casino brand standards and requirements
- Interview, train, coach, counsel, evaluate and administer discipline to Food & Beverage team
- Maintain confidentiality of pertinent casino data
- Maintain clear and open communication with guests, managers, and team members
- Consistent and regular attendance is an essential function of this job
- Performs other related duties as assigned
PHYSICAL REQUIREMENTS:
- Must be able to stand and exert well-paced mobility for periods of up to five (4) hours in length
- Must be able to withstand various activities such as frequent walking, prolonged standing, stretching, bending and kneeling without restriction
- Must be able to reach, bend, stoop, push, pull and lift 40 pounds, must be able to reach above shoulders frequently and repetitively
- Must be able to subject to wet floors and temperature extremes and be able to handle stress and personnel issues
- Must be able to frequently move freely about the property, maintain manual dexterity to operate job related equipment, such as telephones, copiers, etc.
- Must be able to work indoors and occasionally outdoors and be exposed to various environmental elements
