Essential Duties and Responsibilities
Back of the house operations
  • Manage the culinary and back of the house team including scheduling, training and overall supervision
  • Selects choice ingredients that will give dishes the best flavor
  • Experiments to come up with new specialties that will draw diners into the restaurant
  • Coaches the sous chef and other members of the kitchen staff, so they perform at their best
  • Determines how much food to order and maintains an appropriate supply at the restaurant
  • Keeps up with trends in cooking and the restaurant business to ensure that guests have a positive experience
  • Works quickly and accurately during busy periods, such as weekends and evenings
  • Responsible for the cleanliness of the restaurant and compliance with the Department of Health requirements
  • Must be effective in handling problems, including anticipating, preventing, identifying, and solving problems as necessary
  • Must have knowledge of F&B preparation techniques, health department rules and regulations, as well as liquor laws and regulations.
  • Make sure that all kitchen and wait staff adhere to food safety and hygiene regulations to ensure a clean and sanitary kitchen
  • Acts with appropriate caution in a dangerous environment where there are knives and high-temperature surfaces
  • Maintain kitchen equipment; schedule repairs and additional maintenance as needed
  • Manages the staffing schedule for all kitchen staff
  • Manages the budget related to revenue and profitability
Front of the house operations
  •  Manage a team of front of house staff including scheduling, training, and general supervision
  • Oversee that all opening and closing duties of the outlets are completed correctly and that cleanliness and maintenance are maintained
  • Responsible for daily deposits, and the correct operation of the POS systems
  • Item pricing and sales updates in POS.
  • Balancing of all daily and nightly cash drawers and POS
  • Inventory and maintenance of par levels for front of house items
  • Providing excellent customer service to guests and excellent leadership to employees
  • Enforce and monitor all health, safety, and sanitation standards in the wait staff areas 
  • Assist with digital and local marketing
  • Handle guest complaints according to provided guidelines
  • Responsible for quality of meals and service  
  • Responsible for annual budget development and implementation and daily budget monitoring
  • Manage to 30% food cost, 20% labor cost, and 20% or less on alcohol cost
  • Manages the staffing schedule for all front of the house staff
Education, & Experience
  • Bachelor’s degree in culinary arts and/or restaurant management is strongly preferred with
  • 3-5 years of experience in a fast-paced restaurant outlets
  • Significant experience as an Executive chef, in addition to experience as a sous chef or line cook

Working Conditions
  • Restaurant operates 5 days a week off season, 7 days a week in season.
  • The work environment for this position is generally an indoor controlled environment. Noise level is moderate; expect noises like office machines and light traffic.
  • Will be required to work overtime and weekends during the company’s in-season time.
  • May be requested to drive company vehicle to other locations.

Physical Requirements
About 1/3 of one's time will be spent climbing, balancing, stooping, kneeling, crouching or crawling. One-third to two-thirds of one's time will be spent standing, walking, sitting, and reaching. About 2/3 of one's time will be spent using one's hands to finger, handle or feel, as well as talking or hearing. Expect to lift up to 25 lbs on a regular basis. Vision required: close, color, peripheral, depth perception and ability to adjust focus. Some other physical demands come from continuous computer work, cash register work, sales floor work, events work, and mail order work.
