SUMMARY
The Production Winemaker will aid the Director of Winemaking in all facets of winemaking from the vineyard to the bottle. They will oversee the day-to-day operations in the winery, managing the laboratory and staff, cellar and staff and the bottling line. This position will build into overseeing specific vineyard and winery programs.

ESSENTIAL DUTIES & RESPONSIBILITIES:
Administrative:
  • Perform all Navision inputs: work orders, inter-winery movements, bottling, etc
  • Compile and maintain bottling spec sheets
  • Keep records for all possible audits (TTB, FSMA, bank and international audits)
  • Manage all QC programs
Bottling:
  • Confirm that bottling specs, sterilization, dry goods, wine specs and processes are correct for each bottling
  • Oversee the Cellar Master and staff on the bottling line
  • Organize tastings of all wines prior to bottling
Laboratory:
  • Review all analysis and report any out-of-spec wine to Director
  • Ensure all wines are heat and cold stable at time of bottling
  • Work with Director of Winemaker on all experiments
  • Evaluate and adjust all must and juices on arrival under direction
  • Manage the Laboratory Manager and staff
Winemaking:
  • Prepare finishing trials for bottling blends (historical info and past vintages)
  • Oversee all adjustments on all musts and wines
  • Run Ts and Bs during fermentation as needed
  • Direct winery M-L program
  • Direct post-fermentation SO2 additions
  • Contribute to winemaking plan with Director of Winemaking
  • Setup routine tastings of all lots and blends
  • Provide sensory input during blending
  • Taste individual barrels before blending
  • Taste for faults wherever needed
Events:
  • Do tours and perform “Winemaker Dinners” as needed
Cellar:
  • Purchase and maintain inventory of fermentation supplies
  • Manage Cellar Master and staff
  • Oversee all cellar operations and implement QC initiatives
QUALIFICATIONS:
  • Enology or related college degree
  • 5 years wine laboratory, production experience
  • Computer skills
  • Wine sensory skills

Physical Demands
  • Able to stand and walk for long periods of time
  • Must be able to lift 50 pounds repeatedly
  • Ability to carry up to 50 pounds over moderate distances
  • Ability to bend, twist, stoop, reach, crawl and walk
  • Ability to climb ladders and stairs
  • Identify and distinguish colors
  • Ability to pull or push objects over moderate distances
