Accountable To: General Manager
Status: Exempt
Rate: $69K - $71K (Employer est.)
  • Plan weekly staff scheduling, based on labor model and business need
  • Contribute to organizational schemes involving apprenticeship development
  • Carry out lots of kitchen administrative works along with other kitchen-related duties, including front of the house and back of the house and in support with banquets
  • Deputize for the executive sous chef and run the kitchen whenever the executive sous chef is not available for sirocco and banquets; front of the house, back of the house and act as manager on duty if need be for bar, sirocco, pool, restaurant and room service
  • Ensure servings have very high culinary standard
  • Oversee food storage and purchase
  • Manage a low food cost and inventory cost
  • Ensure hygienic and very safe kitchen environment – up to code with the Health Department
  • Help in writing menu for the kitchen and creating new recipe
  • Produce high quality cuisines just like the head chef would have done
  • Report directly to General Manager and work alongside the executive sous chef on kitchen operations
  • Participate in training and retraining of cooks
  • Long term experience, which could have been acquired on the job, including degree in relevant fields of study, like Food Hygiene, Health and Safety, Culinary Art, Professional Cookery and so on
  • Willingness to put in long hours at work, with the length of time depending on business level
  • Ability to teach junior cooks about ethics and laid down consistent procedures of the kitchen
  • Ability for effectiveness, when under intense pressure, and to remain calm even when all around is a bedlam
  • Flair with and passion for different kinds of ingredients
  • Maintain labor/payroll in line within metrics in place
  • Ability to respectfully and professionally lead and direct others to get the job done as required by the clients and establishment’s management
  • Manage all activities in the kitchen, including food preparation and production, and management and training of kitchen staff
  • Ensure efficient, cost-effective operation and profitability of food production
  • Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order
  • Ensure that food products, presentation is consistent, and plating are of the highest quality, and are prepared to serve in a timely manner
  • Assure adherence to all standards of food quality, preparation, recipes, and presentation in conjunction with the specifications
  • Monitor holding and storage operations, food delivery, stocking and food rotation, and guarantee food service sanitation standards are met
  • Assure kitchen personnel is trained in best cleanliness and sanitation practice
  • High school or GED equivalent required, formal culinary training or associate degree in culinary arts preferred
  • Minimum 5-8 years cooking experience in a fine dining environment and experience in a culinary leadership role preferred
  • Ability to communicate clearly with managers, kitchen and dining room employees, and guests.
  • Safe Food Handling Certification
  • Ability to bend, stand, and stoop for long periods of time, and working long hours in hot conditions
  • Must have experience calculating figures and amounts and performing mathematical functions to meet the business needs
  • Keeps the General Manager fully informed of all problems or matters of significance.
  • Performs all duties and responsibilities in a timely and efficient manner in accordance with established company policies and procedures to achieve the overall objectives of this position.
  • Maintains a favorable working relationship with all other company employees to foster and promote a cooperative and harmonious working environment.
  • Adheres to company policies and procedures.
    • Attends work as scheduled.
    • Follows hotel’s dress and grooming standards.
    • Minimizes safety hazards by following all safety rules and procedures.
