As a member Sea Shadows Inn Management LLC, the Executive Chef at 5200 Restaurant & Lounge will demonstrates extraordinary and positive leadership, while being responsible for all culinary operations.  The Executive chef proactively collaborates with all departments to provide a world class guest experience Core responsibilities include management of the kitchen staff to ensure optimal department efficiency, productivity and quality standards; keeping all menus and outlets up to date on culinary trends, best practices and creative opportunities for growth; document and record all recipes and procedures in an easily accessible and timely manner; be responsible and in charge of kitchen.

ESSENTIAL JOB FUNCTIONS:

  • Menu Development

    • Develop, test and implement new menu items with Kitchen management team; coordinate menu item tastings with team
    • Update menu recipes and changes within recipe training guides
    • Develop pairings and special amuse items
    • Ensure that breakfast, lunch and dinner menus are creative and unique for the guest experience
    • Stay current on restaurant industry and culinary trends, and presentations
  • Operations

    • Understand and respond to all guest needs and requests in a timely and professional manner
    • Manage Kitchen staff and food costs to assure most efficient practices are in place and budget expectations are being managed / exceeded; maximize resources
    • Oversee proper and efficient preparation of food for all meal periods, employee meals, special events, room service, ensuring that quality and quantity standards are being met
    • Maintain pars, orders and monitor pricing for all items as directed; ensure kitchen storage areas and walks are stock and organized
    • Maintain relationships with vendors and solve issues in a timely manner; keep current listing of all partners and preventative maintenance schedules
    • Assign and follow all specified procedures to open or close the kitchen
  • Staffing and Safety

    • Hire, train, schedule, support, supervise, review, and hold accountable, all culinary employees, to maintain highest possible levels of employee morale and department productivity
    • Ensure clean and safe work practices, including compliance with company, local and state health department safety and food handling regulations; and the proper use and handling of all relevant equipment
    • Approve time & attendance for payroll processing, and document all personnel/payroll transactions by completing a PAF

EDUCATION, MINIMUM‌‌ ‌EXPERIENCE & PHYSICAL‌ ‌REQUIREMENTS:‌ ‌

  • High School diploma or equivalent required; college or vocational training highly preferred
  • 3 years of experience as an Executive Chef or Executive Sous Chef within a refine dining environment ideal
  • Desire to keep abreast of food and beverage trends
  • Strong personnel development and coaching skills
  • Self-motivated, organized, detail orientated and composed
  • Ability to make impactful and effective decisions regarding profitability, service, waste control, and working environment standards
  • Well groomed, professional image
  • Flexible schedule; able to adjust to the needs of the guests and staff
  • Ability to obtain CA Food Handler Permit within 30 days of hire
  • Ability to communication, infer, read materials and recipes in English and/or Spanish
  • Ability to use repetitive hand and body motions on a regular basis such as grasping, listening, hearing and visual acuity
  • Ability to stand and walk for extended periods of time on varying ground levels with stairs on a regular basis
  • Must be able to lift 50 lbs. on a regular basis, and be able to bend, stoop, stretch, climb and squat frequently to fulfill a range of manual tasks

The noise level in the work environment is usually moderate to loud.
